I love the look of all mahogany
Will a regular D03 project louder than an all mahogany

I don't know about "projection" or "louder," but it will emphasize different frequencies - more midrange frequencies - which might sound "louder" to your ears, or to the ears of those out in front of the guitar.  Only way to know is to play them side by side.

 I've had A D-03MT  and my old D-02, which is Sitka/mahogany. The Sitka over mahogany definitely projects more.
    The D-03MT is very sweet sounding, but the projection is subdued when compared to a Sitka top.
