I know it is extra work and thus the up-charge - Martin charges $250 extra for the soundboard, Larrivee charges $400 extra for the soundboard and $1000 more for the Total SB.

I haven't really made a study of this, but I did notice Gibson guitars seem to be priced the same for both options - why is this?

The only thing I can think of is that Gibson makes a lot of bursts and it is part of their identity. How often do you hear "Gibson makes great bursts" - quite often. I'm guessing the cost of the burst is included in the cost and if you want a non-burst, too bad, you're still paying the premium.  Not too many non-burst J-45s.
