I know Larrivee and Martin still use dove tail joints.

It seems most guitar makers these days use bolt on -  I suppose for ease of construction and ease of service, maybe cost too.


What other guitar brands use a dove tail joint

I think that Gibson still use one.

As for ease of service some still glue down the fingerboard that lays on the top of the body.Some use both screw and/or bolt when attaching the neck.Have you ever tried to unscrew a bolt/screw inside a guitar body,a real pain.Not to mention removing in one piece that piece of wood that covers the bolt/screw head.Also you don't know if someone was having a bad day and decided to also glue the screw/bolt in place.

It does make doing a neck reset an adventure.
