I have never played any Larrivee Forum III models, but know they are using Italian spruce for the top woods. I was wondering how does it affect the sounds of guitars. How does it compare to the Sitka spruce which Larrivee uses a lot? Is it more expensive than Sitka spruce?

The italian spruce option was only on the Forum 3 guitars - all other LS models before and after are made with Sitka ( unless there is something new happening ). It is more expensive, and seems to be brighter and crisper, and more responsive. If you can find an F3, you really need to play it to understand -

FYI, a number of the Forum IIIs were all hog.

Yup - have one. But I don't think the earlier LS's, or any of the new ones since the F3 run, have the mahogany top option. Maybe there were some customs?
