I've admired Alex Lifeson's (Rush) use of acoustic for a long time. Songs like A Farewell to Kings, Closer To The Heart and The Tress have some great acoustic parts.

Also, Rik Emmett of Triumph's brilliant acoustic work on songs like Magic Power and Hold On.

Off the top of my head I also like Slash's riffs in Patience by Guns'N'Roses and Colin James' resonator intro to I Just Came Back To Say Goodbye (It's part of Stones In My Pathway by Robert Johnson).

It's an absolutely beautiful song with great lyrics. I especially love it when the mandolin comes in.

I also dig Battle of Evermore and Gallow's Pole.

The version of Going to California on the live How The West Was Won release is superb

 +1 to that - I'd also include the acoustic instrumental Hope from Snakes and Arrows - lovely 12-string

Badfinger's Pete Ham did a nice job backing George Harrison on "Here Comes the Sun" for the Concert for Bangladesh album.

Oh wait...maybe that's not a rock song. Great acoustic guitar song song....

Hey, I was just playing that this morning. It's one of my favorites.
Dave Van Ronk was an incredible musician. I wish I had got a chance to see him before he passed.
