Phil Carson Crickmore in Victoria Australia offers a 12 day course where you build your guitar with him.
Totally cool idea. There must be other luthiers who do this.
Here is a post by a fellow who built his own guitar in 12 days:

Yeah, there are several in Vancouver, round about where you are. The courses offered by Nicole Alosinac and Meredith Coloma are costly but look amazing.
Hey thanks willynelson13! That would totally work for me. Maybe one day...
Speaking of Nicole Alosinac the custom Larrivee she built for herself while working at Larrivee Vancouver around 1999 is up for sale.
Looks very nice. If anyone interested just contact her
Yeah I have had her work on my and my father in laws guitars. She does great work. On her website is a repair where she replaced top on a Larrivee Jumbo, with Larrivee spec'd bracing. It is pretty neat.

There are a few in the US who offer guided build sessions. John Hall of Blues Creek Guitars offers a 5 day class where you can build a Martin style acoustic guitar "in the white" (you have to finish it yourself afterward.)
