Your thoughts on polishing the satin finish out.

It does! To me it looks nicer than the factory polish (maybe only because of the light though)

I have three -03 Larrivees and "polished" each of them. I like a gloss finish but did not polish these sufficiently to consider them glossy. I did them all by hand back in the old days with encouragement and instructions from Orsino and Naboz, and Naboz even sent me the materials. The results were kind of a semi-gloss. Kind of like the effect of an Avalon or a Lowden guitar (but not nearly as nice). There is a nice smoothness to the finish and a visual depth to the figure in the wood, particularly in my Koa and Blackwood guitars. Here is a picture of my LV-03BW  and my OM-03K:
