Acoustic Guitar Magazine has a great article on back and sides woods in the Jan 2013 issue.

Just read the article a few days ago and it is good. But woods used for backs and sides is totally subjective when it comes to the sound and that dictates the player PLAYING a lot of different guitars to see which sound is preferred.
